To make the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Premix (makes 850ml, to serve 10)

400ml decent vodka

150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

Making the Citrus Syrup: Combine the listed components into a saucepan, heat until it reaches a light boil, mixing so the sugar melts. Then, remove from the stove allowing it to reach room temperature fully. Transfer into a sterilised bottle, seal and refrigerate it in the fridge, it can be stored for up to a month.

For the Premix: Mix all the liquids in a big jug, let it rest for 60 minutes, then filter it , ideally through muslin, making it perfectly clear.

For serving: Pour 85ml of the batch mix to a cocktail shaker filled with ice, gently stirring gently for one minute to cool it down. Filter to a frosted cocktail glass or similar, top with a few cranberries and finish by giving it a light spray of mandarin oil over the top.
